Simple Alfredo Sauce (Demo at Great American Cooking Expo 2009)

Simple Alfredo Sauce

1 1/2 cups heavy cream
2 tablespoons unsalted butter
Table salt and ½ tsp. ground black pepper
1 cup grated parmesan and Romano cheese.
Pinch of fresh grated nutmeg.

Bring 1 ½ cups heavy cream and butter to a simmer in 3- to 4-quart saucepan over medium heat. Reduce heat to low and continue to simmer gently until mixture reduces to about a cup, 12 to 15 minutes. Stir in 1/2 teaspoon salt, and pepper, cheese and nutmeg, and cook until thick and cheese is completely melted.
