Spicy Shrimp Crostini

Ingredients:
1/2 lb. medium shrimp (cooked) and very coarsely chopped
1/2 small red onion, finely chopped
2 garlic cloves, crushed
1 tsp. crushed red pepper flakes or chili flakes
4 Tbs. Picudo/Hojiblanco or other sweet and buttery extra virgin olive oil
1 Tbs. White Balsamic Vinegar
Salt
Freshly ground black pepper
1 Tbs. finely chopped parsley
1 bag/20 pieces of pre-made or home made Olive Oil Crostini

Directions:
Combine shrimp with onion, garlic, red pepper flakes, oil and lemon. Add salt and pepper to taste and stir in parsley. Spoon Shrimp mixture onto Crostini. Serve cool or at room temperature.

HOME MADE CROSTINI

Ingredients:
1 loaf of French bread (Baguette)
1 cup buttery Extra Virgin Olive Oil such as Arbequina
1/2 cup Grated Parmigiano-Reggiano or Grana Padana
4 cloves garlic, pressed
Red or Black Pepper to taste

Directions:
Slice bread 1/3 inch thick. Mix all the other ingredients together. Brush both sides of bread with mixture. Toast the bread under a broiler till lightly golden on each side. Allow to cool.
