Lida’s Puttanesca Sauce

Italiano Extra Virgin Olive Oil from The Olive Tap
Garlic Olive Oil from The Olive Tap
14 oz. San Marzano tomatoes
1 jar of San Marzano tomato puree
1 small jar capers
5 oz. pitted black olives
Anchovy paste or 2 anchovies
Fresh Italian flat parsley
Your favorite pasta

Generously coat the bottom of a skillet with the Italiano and the Garlic Olive Oil, then heat. Use about 3 parts Italiano to one part Garlic Olive Oil. Add the canned tomatoes and crush. Add some of the tomato puree to thicken the sauce to your liking. Add the capers, black olives, and anchovies. Simmer for about 15 minutes or until the flavors blend. Add the parsley at the end. Do not allow the parsley to cook.

Serve with your favorite pasta. Best enjoyed with family, friends, conversation, and a fine Chianti wine.
