Spaghetti with Ricotta (uses Orange Vincotto)

12 oz. Spaghetti
6 oz. ricotta
Orange Vincotto
Grated Parmesan cheese
Salt and pepper
Cook spaghetti until al dente. In a large serving bowl combine the ricotta with a few tablespoons of the pasta cooking water, 2 tablespoons of Orange Vincotto, plenty of parmesan, salt and pepper. Mix well and toss through the spaghetti. A little Olive Tap extra virgin olive oil can be drizzled on top to complement the flavors.
