In Mexico, where fresh and dried chili peppers are often referred to by different names, Ancho is the term for a dried Poblano pepper. Anchos are distinguished by their deep red-brown color and rich, fruity medley of tobacco, raisin, and prune flavors. They're slightly hot, too. Finely ground for use in sauces or dips, on meats or in any dish that could use a dash of Mexican flair.
