This is an Extra Virgin Olive Oil that has had the essence of fresh roasted Garlic added. It is so rich, fragrant and sweet tasting, it has more uses than we could possibly list here. No other product in The Olive Tap has as many loyal followers. We had people drive 30 miles in a blizzard this February just to re-stock.
Olive Tap Garlic flavored extra virgin olive oil is an excellent all around choice for cooking. Use it on salads, for dipping, and wherever a clean balanced garlic flavor accompanying mild oil is desired. Lot's of people blend it 50/50 with our Basil Oil for a soft herbblend flavor. Paired with Oregano White Balsamic Vinegar, it screams to be poured on Italian, Greek, or French foods.

Blood Orange Olive Oil From Tunisia
Sweet and delicate Mediterranean Blood Oranges and buttery Chemlali Olives are crushed simultaneously to produce oil with a taste you will not easily forget. Porcini Mushroom Oil From Northern Italy This is fantastic oil that has a flavor that can only be surpassed by fresh Porcini Mushrooms. It has a deep earthy taste with an aroma to die for! It is made in Italy by a small producer who closely guards his secret for steeping Porcini mushrooms in extra virgin olive oil. This rare and prized oil is delicious on mashed and fried potatoes, meats and sautéed vegetables. It is extremely versatile with pasta dishes, and can be drizzled on almost everything with tomato sauce. Try it on omelets and pizza.
100% Extra Virgin Olive Oils
Arbequina, Early Harvest 100% Extra Virgin from Australia Maybe the best Arbequina we have ever offered. Sweet, fruity, fresh, mild, light and buttery are all adjectives used to describe this Olive Oil. The finish is fresh with notes of Avocado and just a slight hint of spiciness. It will be ideal on salads, and in seafood dishes. If you need a little more flavor and a bit more sweetness, try our Castile EVOO. Arbequina will complement sweeter lettuce and tomato salads, and would be excellent in any seafood salad dish. Ascolano 100% Extra Virgin from California A popular Italian cultivar, this Ascolano comes to us from an award winning artisan producer in northern California. Ascolano is known for its medium fruitiness, tropical notes and just a hint of Apricot. It has a lighter texture than most other oils, without sacrificing flavor. It exhibits a very pleasant finish, and might score just a few points higher than the 2006 Ascolano. This oil will excel drizzled over spaghetti and angel hair pastas, and will make an excellent Bruschetta or Crostini. The medium fruitiness, and light body of Ascolano is ideal when grilling fish, chicken, and vegetables. Try it with a nice crusty bread and bread dipping seasonings and cheese.
Sweet Barnea 100% Extra Virgin from Australia
New to The Olive Tap®, this outstanding Barnea has been brought to us by our friends at Boundary Bend. Originally a "Holy Land" varietal, some of the best Barnea Extra Virgin Olive Oil now comes from Australia where its cultivation and production has been perfected. It features a very light, fresh, buttery taste, with no discernable olive flavor making it the olive oil of choice for baking.
Best in baking recipes, Sweet Barnea is a general purpose neutral flavored EVOO that will perform well in almost all applications where you do not want olive flavor. It's extremely light fresh flavor will allow your Balsamic Vinegars to exhibit their full, rich characteristics and flavor profile.

Hojiblanca 100% EVOO from Australia
Back for a second year, this fine Hojiblanca from Boundary Bends Murray River Orchards has been a solid favorite at The Olive Tap® It features a light sweet buttery flavor and texture with an almond bite and a slightly peppery finish.
Hojiblanca is a general purpose EVOO that will perform well in almost all applications. It pairs well with all of our Balsamic Vinegars, and will allow the flavors of the vinegars to stand out when used in salads. It has been said that the "White Leaf" Hojiblanca can tolerate heat better than most other Extra Virgin Olive Oils, and thus may be a better choice in cooking applications.
Italiano 100% Extra Virgin from Italy Our Italiano Extra Virgin Olive Oil is made exclusively from mid-season Southern Italian olives that have been hand-picked and expertly pressed to produce an oil of superior quality and freshness. It is light in texture, with a medium fruitiness and a light yellow coloration. Look for aromas of tomato and caper, with a hint of floral and Almond undertones. Italiano oil exhibits exceptional balance and versatility and can be paired with all Balsamics and Vinegars without hiding or masking the flavor of the other ingredients. The classic Italian flavor will complement fresh salads, pasta, and sauces, and will enhance the taste of your cooked dishes. Koroneiki 100% Extra Virgin from Australia
Koroneiki is a greek varietal that is medium bodied and medium flavored oil with a classic taste and texture. This oil has a sweet buttery flavor and a nice ripe fruit aroma when warmed. It is a very good choice for sauce making, and whenever a bit more flavor is desired.
Koroneiki is a well balanced all purpose oil, and is a great counterpart to the more flavorful Balsamic Vinegars. Add some Arbequina to soften it, and/or Hojiblanco to raise the smoke point. This is an all purpose oil that will be excellent on salads and in sauces. As a dipper, it will go well with grated cheese and dipping spices.

Picholine The Olive of Provence 100% Extra Virgin from Australia
Our good friends at Boundary Bend continue to amaze us with their skill at producing Extra Virgin Olive Oils with true to form flavor and texture.This Picholine is no exception.This is pale, well balanced almost sweet early harvest oil with a fresh herbal taste. It features mild fruit, green apple and artichoke notes, and a distinct peppery finish.
Native to Provence, Languedoc, and Corsica, this fine specimen will be ideal served with dishes of Southern France. While it can be used to lightly sauté vegetables, and is very acceptable as seasoned dipping oil, it is best suited on salads and served over your favorite dishes.Try it drizzled lightly on plain white or wild rice or mushroom and pea Risotto or rice pilaf.
Balsamic Vinegar of Modena
Traditional 18-Year Balsamic Imported from Modena, Italy
This is our finest "on-tap" Balsamic Vinegar, produced in the traditional Modena style. Balsamics are aged for up to 18 years in various wood barrels, resulting in a unique yet balanced flavor with uncompromising character. Rich in fruit flavors, and influenced by the various wood barrels, you get a classic Italian product with a taste that will delight your senses.
This outstanding Balsamic Vinegar can be used as a condiment to top off a dish before serving, or as a special treat on salads. Try a few drops in soups, stews, on grilled and roasted meats, and on Chicken and Fish. It is especially delicious when drizzled on sliced strawberries and other fresh fruit.
Aceto Balsamico Di Modena
This Premium Quality, All Natural, 100% Balsamic Vinegar from Modena Italy is the real deal. It is a true 12 year old Balsamic Vinegar, produced in the "Traditional" style by artisans who follow ancient family recipes to produce the finest of Balsamic Vinegars. With the requisite 6% acidity, and containing only Balsamic Vinegar, it bears little resemblance to commercial grade Balsamics.
Less dense and sharper than our Extra Vecchio 18 year Traditional Balsamic, this "Vecchio" grade is very affordable by Balsamic standards, and is preferable when making salads that benefit from the crispness and dense complex flavors that the sequential barreling produces. Add a tablespoon of your favorite pureed fruit (Kiwi, Berry, Peach, Apple, Pear etc.) to 2 or 3 tablespoons of vinegar, and 1/3 to ½ cup of your favorite EVOO to create a unique Balsamic Vinaigrette. Aceto Balsamico is exquisite drizzled on fruit or Caprese Salad, and will brighten up and add depth of flavor to almost any dish. Try a few drops in soups and on seafood.
Apple Balsamic Vinegar Imported from Modena, Italy
This is genuine Balsamic Vinegar of Modena, with apple essence added. It has a full rich Apple flavor, and is based on our 18 year Traditional Balsamic Vinegar. As a result, it has a lower acid level than other Balsamics, but still has the requisite tartness one expects. This is another "WOW". product for the Olive Tap.
This sweet Apple Balsamic will pair well with almost any of our EVOO's, especiallythe light to medium Arbequina, Ascalano, Castile and Organic varieties. As a salad vinegar, it will add complexity and rich apple overtones on top of a fine aged Balsamic Vinegar. It will also form an outstanding glaze on Pork, Chicken and Salmon.
Black Currant Balsamic Vinegar Imported form Modena Italy.
This is another selection that has our customers saying "WOW"! Roasted French Walnut Oil It is a sweeter Balsamic Vinegar with a lower 4% acid level for a smooth finish. It has a complex taste that will delight the palate when used on all kinds of salads and fruits. Rich and dense, it does not need to be reduced to use.
This full flavor profile makes it an excellent choice with Spring Mix, and bitter greens. Best used with light to medium E.V.O.O, it will complement Feta Cheese, Red Onions, Orange Wedges, and Cucumbers. Pre-glaze lamb, beef, pork roasts and chops to create a beautiful caramelized surface. Try it on ice cream with fresh berries, or drizzle on shaved ice as a special treat.
Fig Balsamic Vinegar Imported from Modena Italy
Whole fruit flavor is added to a 12-year Balsamic Vinegar to produce our most balanced Balsamic. Not too sweet and not tart, it can be paired with every one of our E.V.O.O's. This dense, sweet balsamic vinegar exhibits mellow fig flavor with less "bite" due to a lower acid content. Sure to be a favorite at dinner parties, Fig Balsamic is outstanding drizzled on Caprese Salad (Tomato, Mozzarella, Basil). It will be a delicious on any type of dinner salad featuring sweet lettuce or Spring Mix. For something really special, try it on Cantaloupe or Honeydew Melon sprinkled with minced Prosciutto and Parmesan Cheese.
Oregano White Balsamic Vinegar
This is a crisp, White Balsamic Vinegar, infused with the exquisite flavor of Oregano, to produce a classic Mediterranean flavor. The addition of Oregano will make this vinegar the perfect complement to a wide variety of oils, and will produce outstanding vinaigrettes.
Make a quick salad using White Balsamic Vinegar with Garlic or Basil Olive Oils. Tangerine Balsamic Vinegar Imported from Modena, Italy
This is genuine Balsamic Vinegar of Modena, with whole fruit Tangerine essence added. The blend of 12 and 18 year Balsamics, results in a lower acid level, offset by the tart citrus flavor that makes our customers say "WOW".
Vegetables, spring mix, and salad greens will taste great when dressed with Tangerine Balsamic. Paired with Blood Orange or Meyer Lemon Olive Oils, you get a salad dressing that is #1 at The Olive Tap. It is a very tasty glaze for baked Salmon, and gives grilled chicken a sweet-sour zing.
White Balsamic Vinegar
In Italy, this is known as White Balsamic Condiment. Made with White Trebbiano Grape Must (juice), it does not undergo the cooking and barrel aging process of Balsamic Vinegar of Modena. The result is crisp vinegar with a touch of sweetness reminiscent of hand crafted vinegars from northern Italy. Extremely adaptable, it can be used with any of the Olive Tap Extra Virgin Olive Oils as well as the full complement of flavored oils. This is a tart Balsamic Vinegar with a residual grape flavor and 6% acidity. It is ideal for someone trying Balsamic Vinegar for the first time.
Try White Balsamic Vinegar with Citrus Oils on a wedge of lettuce, accompanied by fresh Tomato slices and a rich Bleu/Gorgonzola cheese.
Specialty Oils
Macadamia Nut Oil
The flavor is sublime in this light textured, sweet, nutty, high temperature oil. Along with EVOO, Macadamia Nut Oil is considered to be one of the healthiest oils you can use. High in Omega 3, Macadamia Oil can contribute to cardiac health, and is associated with lower blood pressure.
Macadamia Nut Oil has a high smoke point of 390 degrees, and keeps its flavor at these high temperatures. Use it to sauté and stir fry with ease.
Comparable to butter in cooking applications, it can be used on breads and it adds rich flavor and aroma to blanched vegetables or steamed fish. It is excellent for sautéed fish and shellfish. Macadamia Nut Oil makes for excellent vinaigrette in lighter tasting spring/summer salads. Use it to make the best tasting pancakes, waffles, cakes, cookies and pies.
Roasted French Walnut Oil
With a mouth watering flavor and an extremely healthy profile, Walnut Oil is a must in the gourmet kitchen. Chock full of Omega 3 and natural anti-oxidants, this unrefined oil is an excellent source of health fats. The delicate Roasted Walnut flavor is perfect on salads, grilled meats and vegetables, and in most baking situations. Like EVOO, avoid too high a temperature.
