2025 Greek EVOOs Are Sure to Please - Fresh & Bold!
For olive oil lovers, late winter is the most exciting time of the year. It marks the arrival of the newest harvest of 2025 Greek EVOOs — oils pressed from olives picked just weeks earlier at peak ripeness during the November 2025 harvest.
These early-harvest Greek EVOOs are known worldwide for their bold aromas, vibrant flavor, and naturally high polyphenol content — the powerful antioxidants that contribute both to the oil’s distinctive peppery finish and its celebrated health benefits.
Our newest 2025 Greek EVOOs have completed their journey from grove to press to The Olive Tap stores, where they are bottled fresh just for you. These exceptional oils come from a small, multi-generational family estate where five generations have perfected the art of olive cultivation and cold extraction, producing award-winning oils year after year.
At least one of these remarkable Greek oils deserves a place in your pantry.
Two Exceptional Greek Varietals to Experience
This season we are featuring two standout Greek EVOOs: Athenolia 100% EVOO and Kalamata Ultra High Polyphenol 100% EVOO.
Greek olive varietals are prized for their ability to produce oils with both complexity and balance. Unlike many mass-produced oils, these varietals are grown in rocky, mineral-rich soils near the sea, where climate stress naturally encourages the olives to develop higher antioxidant levels and more concentrated flavor.
Athenolia 100% EVOO offers a beautifully balanced profile with fresh grassy notes, green almond, and a smooth, lingering finish — making it incredibly versatile in the kitchen.
Kalamata Ultra High Polyphenol EVOO is a true standout. Its exceptionally high polyphenol count gives it a lively bitterness and signature peppery kick at the back of the throat — a hallmark of the freshest and healthiest olive oils in the world. This is the oil olive oil enthusiasts seek out for both flavor and wellness.
Perfect Pairings from The Olive Tap
These fresh 2025 Greek EVOOs pair beautifully with The Olive Tap’s extensive collection of Balsamic and Specialty Vinegars. Whether you are dipping, drizzling, roasting, or finishing a dish, these oils bring authentic Mediterranean character and freshness to every meal.

FAQs
What are Polyphenols?
Polyphenols in olive oil are natural, antioxidant-rich micronutrients, primarily found in extra virgin olive oil (EVOO), that act as anti-inflammatory, disease-fighting compounds. They protect cells from oxidative stress and free radical damage, contributing to heart health, improved blood pressure, and a peppery, bitter taste.
What are the Key Facts of Polyphenols?
Key Facts about Olive Oil Polyphenols:
Health Benefits: They are linked to reduced risk of diseases like cancer and Alzheimer's, as well as reduced inflammation.
Key Types: Major polyphenols in EVOO include oleocanthal, tyrosol, and hydroxytyrosol.
Flavor Profile: Higher concentrations are directly responsible for the, sharp, peppery, and bitter notes, particularly in robust, fresh oils.
Quality Indicator: Because they are fragile compounds, high polyphenol counts often indicate a high-quality, cold-pressed, fresh extra virgin olive oil.
Source: They are present in the fruit of the olive tree, serving as a natural defense system.
Concentrations vary based on the olive variety, harvesting time, and processing methods.
