Using a traditional family recipe, Vincotto is made from 100% grape must using two varieties of over-ripened black grapes, Negroamaro and Malvasia. The "must" is reduced to one fifth of its original volume over a low flame for several hours and then transferred to oak casks. The must is then aged in these oak casks for four years, allowing the taste to develop consistently. Vincotto is sweet, velvety vinegar with the subtle overtones of spices, grapes and prunes and used by Italian chefs as their secret ingredient.
Grilled meats truly take on a richer flavor by drizzling mere drops after cooking. Absolutely exceptional when drizzled over aged, hard cheeses such as Pecorino, Asiago, and Parmesan Reggiano. Try it over your favorite desserts including cheesecake, ice cream, and fruit.
